The Inspiration
While pursuing a graduate degree at the Institute of Latin American Studies at the University of Texas, Greg Koury developed the idea for MANUELS. Working with his grandparents in their steakhouses while growing up, and later managing several local Austin establishments led him to the dream of opening his own restaurant. Rather than the typical Tex-Mex fare, Koury’s vision was to create authentic and artfully-prepared dishes from Mexico’s interior and coastal regions.
In 1984, this dream became a reality with the opening of MANUELS downtown at 310 Congress. As Austin grew, MANUELS Great Hills on Jollyville Road in the Arboretum opened in 1998 to serve guests on the north side of town.
The Leaders
High-quality ingredients, consistency, and friendly service make MANUELS an Austin favorite. Greg Koury is CEO, running the company with his wife and co-owner, Jennifer McNevin.
In addition to MANUELS on Congress Avenue and MANUELS Great Hills location, the group successfully collaborated on several other restaurant concepts in Austin, including 612 West, The Iguana Grill, and Changos Taquerias.
The Community
MANUELS has a rich history of community relationships, providing support for food-related programs, charitable organizations, and the performing arts.
